After 40 years, Chris FINALLY figured out how to make French toast. The promise of French toast is a bread that’s sweet and moist on the inside, but still essentially “toast.” The reality is usually wet bread. The solution is adding semolina to the egg yolks and milk mixture, which preserves a sturdy bread with a crispy exterior and fully-soaked crumb. Chris Kimball isn’t particular about the why’s on this topic—n’importe! It works. Get the recipe for French Toast, Perfected here: https://bit.ly

Get the recipe for Sherry-Soaked French Toast (Torrijas) here: https://bit.ly/4knZvMr The best French Toast we’d never heard of is...Spanish! Torrijas aren’t necessarily breakfast competition; instead of milk, they’re soaked in orange juice and sherry, which gives them the flavor of an adult dessert. The lack of dairy (no butter in the pan) allows for clear, clean, bright flavors of zest and spices to shine through. (Chris Kimball did eat this before lunchtime. A special treat on shoot days.) |

The best recipe you’ve never heard of is...French Apple Cake! Chris Kimball nicely summed up the “offhand charm” of this recipe in our magazine. “It is a last-minute dessert thrown together without a recipe,” he wrote. “When one requests exact measurements, French cooks explain the process with a disdainful flick of the head, an exhalation of cigarette smoke and a phrase of discouragement: ‘N’importe.’” It’s basically a pile of apples, glued together with tiny bit of sticky batter, which bakes u
